Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker or on the stovetop according to package instructions. Once cooked, mix rice vinegar into the rice while it's still warm. Allow it to cool.

Prepare the Fillings
Slice the avocado into thin strips. Cut the kani into smaller pieces if necessary. Set aside.

Assemble the Roll
Place a bamboo sushi mat on a flat surface and lay a nori sheet on top, shiny side down. Wet your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

Add Fillings
In the center of the rice, place a line of cream cheese, kani, and avocado. Top with a slice of prosciutto and a sprinkle of mixed cheddar cheese.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll compact. Wet the top edge of the nori to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
