Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Add the rice and water to a rice cooker and cook according to the manufacturer's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes. Let it rest for 10 minutes after cooking.

Prepare the Sushi Vinegar
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve. Allow to cool.

Season the Rice
Transfer the cooked rice to a large bowl. Gently fold in the sushi vinegar mixture while being careful not to mash the rice. Let it cool to room temperature.

Fill the Inari Pockets
Take an Inari pocket and carefully open it. Fill with a spoonful of seasoned sushi rice, pressing gently to pack it in. Repeat with the remaining pockets.

Garnish and Serve
Sprinkle sesame seeds on top of each filled Inari sushi. Add optional garnishes like sliced scallions or pickled ginger, if desired. Serve immediately or chill in the refrigerator for a short time.
