Preparation and Cooking

    Prepare the Dough

    In a large bowl, combine the cracked wheat with warm water and let it soak for 30 minutes. Then, mix in the ground beef, ground lamb, and chopped onion. Add salt and pepper to taste. Form the mixture into small discs to create the dumpling shell.

    Prepare the Filling

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced beef and lamb, along with the finely chopped onion. Cook until the meat is browned and the onion is soft. Stir in the pine nuts and spices, cooking for an additional 5 minutes. Remove from heat and let cool.

    Assemble the Dumplings

    Take a disc of the dumpling shell mixture and place a spoonful of the filling in the center. Fold the edges over the filling and pinch to seal tightly. Repeat until all the dough and filling are used.

    Fry the Dumplings

    In a deep frying pan, heat the olive oil over medium heat. Once hot, gently place the dumplings in the oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Serve

    Serve the fried dumplings hot, alongside labneh and drizzled with extra-virgin olive oil.
