Marinate the Chicken
In a large mixing bowl, combine the plain yogurt, minced garlic, lemon juice, olive oil, ground cumin, paprika, salt, and black pepper. Mix well until all ingredients are combined.
Add Chicken
Cut the boneless chicken thighs into 1-2 inch pieces and add them to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they are ready to use.
Skewering the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to allow for even cooking.
Serve
Remove the chicken kabobs from the grill and let them rest for a few minutes before serving. Enjoy with your favorite dipping sauce or side dishes.
