Pickled Vegetables and Marinated Olives
Preparation
1. Prepare Pickled Vegetables
In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced radishes, and sliced red onion.
2. Make Pickling Brine
In a saucepan, combine vinegar, water, salt, sugar, minced garlic, and dried oregano. Bring to a simmer over medium heat, stirring until salt and sugar are dissolved.
3. Combine and Marinate
Pour the hot pickling brine over the vegetable mixture. Stir well to combine. Allow to cool to room temperature, then cover and refrigerate for at least 2 hours or overnight for best flavor.
4. Prepare Olives
In a small bowl, mix the halved olives with olive oil and freshly ground black pepper. Let marinate for at least 30 minutes.
5. Serve Kabis
To serve, combine the pickled vegetables and marinated olives in a serving bowl. Toss gently and enjoy!
