Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and rinse under cold water. Pat dry with a paper towel.

Season the Cauliflower
In a large bowl, toss the cauliflower florets with olive oil, za'atar spice blend, salt, and pepper until evenly coated.

Fry the Cauliflower
Heat a deep skillet or frying pan over medium-high heat. Add enough oil to cover the bottom of the pan. Once the oil is hot, add the seasoned cauliflower florets in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Assemble the Dish
In a serving bowl, combine the fried cauliflower, chopped cilantro, diced tomatoes, and crumbled goat cheese. Toss gently to mix everything together.

Serve warm, drizzled with spicy tahini sauce on the side.
