    Prepare the Vegetables

    In a large bowl, combine the Napa cabbage, bean sprouts, yellow onion, shredded carrot, diced bell pepper, and chopped green onions. Mix well.

    Beat the Eggs

    In another bowl, beat the eggs until well combined. Season with salt and pepper to taste.

    Combine Ingredients

    Add the mixed vegetables to the beaten eggs and stir until everything is evenly coated.

    Cook the Egg Fu Young

    Heat a non-stick frying pan over medium heat and add a little oil. Pour in a portion of the vegetable-egg mixture, making a round patty. Cook for about 3-4 minutes on one side or until golden brown, then flip and cook for another 3-4 minutes. Repeat with the remaining mixture.

    Prepare the Brown Sauce

    In a small saucepan, combine soy sauce, vegetable broth, cornstarch, and a pinch of sugar. Cook over medium heat until the sauce thickens.

    Place the cooked Vegetable Egg Fu Young on plates and drizzle with the rich brown sauce before serving.
