    Prepare the Pork

    Cut the pork tenderloin into bite-sized pieces. Season with salt and pepper.

    Fry the Pork

    In a large skillet or wok, heat oil over medium-high heat. Add the pork pieces and fry until golden brown and cooked through, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add a bit more oil if needed. Sauté the chopped yellow onion, carrots, and green bell pepper until they are tender, about 5 minutes.

    Add Pineapple

    Stir in the pineapple chunks and cook for another 2-3 minutes until heated through.

    Combine with Sauce

    Return the fried pork to the skillet. Pour in sweet and sour sauce, stirring well to coat everything evenly. Cook for an additional 2 minutes until heated through.

    Serve hot over steamed rice or noodles.
