    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and coat them in cornstarch. Let them sit for about 10 minutes to adhere.

    Fry the Chicken

    Heat vegetable oil in a deep skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.

    Sauté the Vegetables

    In the same skillet, add a little oil if needed and sauté the sliced onion, julienned carrots, and green bell pepper until tender, about 4-5 minutes.

    Make the Sweet & Sour Sauce

    In a mixing bowl, combine sugar, vinegar, soy sauce, ketchup, water, and salt. Stir until the sugar dissolves.

    Combine Everything

    Add the pineapple chunks and the sauce to the sautéed vegetables. Bring to a simmer and then add the fried chicken to the skillet. Toss everything together until well coated and heated through.

    Serve hot over rice or noodles.
