Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, whisk the egg and add the chicken pieces, ensuring they are well coated.

Coat the Chicken
In a separate bowl, add the cornstarch and coat the egg-coated chicken pieces with cornstarch until completely covered.

Fry the Chicken
Heat the vegetable oil in a deep pan over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.

Make the Orange Sauce
In a saucepan, combine the orange juice, soy sauce, brown sugar, minced garlic, and minced ginger. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes.

Add the fried chicken pieces to the orange sauce and toss to coat evenly.
