Prepare the Eggplant
Wash the eggplant and cut it into small cubes. Sprinkle with salt and let it sit for about 15 minutes to draw out excess moisture.

Fry the Eggplant
In a large skillet, heat the vegetable oil over medium heat. Add the salted eggplant cubes and fry until golden brown, about 5-7 minutes. Remove from heat and set aside.

Make the Sauce
In a saucepan, combine the garlic (minced), soy sauce, brown sugar, cornstarch, water, salt, and black pepper. Cook over medium heat, stirring until the sauce thickens, about 3-5 minutes.

Combine and Serve
Pour the garlic brown sauce over the fried eggplant and toss gently to coat. Garnish with chopped green onions. Serve warm with your choice of protein.
