Prepare the Filling
In a large mixing bowl, combine the ground chicken, shredded cabbage, grated carrot, chopped green onions, minced garlic, soy sauce, and sesame oil. Mix well until all ingredients are evenly combined.

Assemble the Egg Rolls
Take an egg roll wrapper and lay it on a clean, flat surface with one corner facing you. Place about 2 tablespoons of the chicken filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to seal the edges. Repeat with remaining wrappers and filling.

Fry the Egg Rolls
In a deep skillet or frying pan, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the egg rolls, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with sweet and sour sauce on the side for dipping.
