Prepare the Beef
Thinly slice the beef against the grain and marinate it in a mixture of soy sauce, brown sugar, minced garlic, and grated ginger for at least 30 minutes.

Make the Sauce
In a small bowl, mix cornstarch and water until smooth. Add to the remaining marinade and stir until combined. Set aside.

Stir-fry the Vegetables
In a large skillet or wok, heat vegetable oil over medium-high heat. Add broccoli florets and sliced carrots, stir-frying for 4-5 minutes until they are tender but still crisp.

Cook the Beef
Push the vegetables to the side of the skillet and add the marinated beef. Stir-fry for 3-4 minutes until the beef is browned and cooked through.

Combine and Serve
Pour the sauce over the beef and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens. Serve hot over rice or noodles.
