Method

Pumpkin Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. 3

    Combine Wet Ingredients

In a large mixing bowl, combine the granulated sugar, brown sugar, eggs, pumpkin puree, vegetable oil, and vanilla extract. Beat until smooth.

  4. 4

    Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. 5

    Bake the Cake

Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cake

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Cream Cheese Frosting Preparation

  1. 7

    Beat the Frosting Ingredients

In a large bowl, beat together the cream cheese and unsalted butter until creamy and smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.

  2. 8

    Frost the Cake

Once the cake is completely cool, spread the cream cheese frosting evenly over the top using a spatula.

Streusel Topping Preparation

  1. 9

    Prepare the Streusel

In a separate bowl, mix together the flour, brown sugar, cinnamon, and rolled oats. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 10

    Add the Streusel

Sprinkle the streusel mixture evenly over the frosted cake.

  3. 11

    Final Baking

Place the cake back in the oven and bake for an additional 10-15 minutes until the streusel is golden brown.
