Cook the Bacon

In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove and place on a paper towel to drain excess grease. Once cooled, chop into bite-sized pieces.

Sauté the Vegetables

In the same skillet with the bacon drippings, add diced onion and bell pepper. Sauté for about 3-4 minutes until they start to soften. Add diced tomato and cook for an additional 2 minutes.

Prepare the Hash Browns

Add the hash browns to the skillet, spreading them evenly. Cook for 5-7 minutes without stirring, letting them crisp up. Then flip the hash browns and cook for another 5 minutes until both sides are golden brown.

Scramble the Eggs

In a bowl, whisk together the eggs with a pinch of salt and pepper. In a separate non-stick skillet over medium heat, scramble the eggs until just set, about 3-4 minutes.

Combine Everything

Once the hash browns are crispy, add the cooked bacon and scrambled eggs to the skillet. Stir to combine and evenly distribute the ingredients.

Add Cheese

Sprinkle the cheddar and jack cheese over the mixture. Cover the skillet for 1-2 minutes until the cheese melts.
