Crust Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C).
Mix Crust Ingredients
In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it in until the mixture resembles wet sand.
Form the Crust
Press the crumb mixture into the bottom and up the sides of a 9-inch pie pan to form an even crust.
Bake the Crust
Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and let it cool.
Filling Preparation
Combine Filling Ingredients
In a large bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined.
Pour Filling into Crust
Pour the filling mixture into the cooled pie crust and spread it evenly.
Bake the Pie
Return the pie to the oven and bake for an additional 15 minutes. The filling should be set, but slightly jiggly in the center.
Cool the Pie
Remove the pie from the oven and let it cool at room temperature for 1 hour, then refrigerate for at least 3 hours before serving.

Whip the Cream
In a mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form.
Add Sugar and Lime Zest
Gradually add the powdered sugar while continuing to whip the cream until stiff peaks form. Fold in the lime zest gently.
Top the Pie
Spread or pipe the whipped cream topping over the chilled key lime pie.
