Method
Hash Browns
- 1
Prepare the Potatoes
Peel and grate the russet potatoes into a large bowl. Rinse the grated potatoes under cold water to remove excess starch.
- 2
Drain and Dry
Drain the grated potatoes and use a clean kitchen towel to thoroughly dry them. This step is essential for achieving crispy hash browns.
- 3
Cook the Hash Browns
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the grated potatoes in an even layer. Season with salt and pepper.
- 4
Fry Until Golden
Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes on the other side. Once cooked, transfer to a paper towel-lined plate to drain excess oil.
Eggs

Cook the Eggs
In a non-stick skillet, crack the eggs and season with salt and pepper. Cook over medium heat to your desired doneness, either sunny-side up, over easy, or scrambled.

In a small saucepan, combine the canned black beans, cumin, garlic powder, and salt. Heat over medium heat until warmed through, about 5 minutes.
