Trout Preparation

Pat the trout fillets dry with paper towels. Season both sides with salt and black pepper.

Spread the all-purpose flour on a plate and gently coat each trout fillet in flour, shaking off excess.

Cook the Trout
In a large skillet, heat olive oil and butter over medium heat. Add the trout fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and keep warm.

Prepare the Potatoes
Peel and grate the russet potatoes. Rinse them in cold water to remove excess starch, then squeeze out as much moisture as possible using a clean kitchen towel.

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the grated potatoes in an even layer. Season with salt and black pepper. Cook for about 5-7 minutes until crispy and golden brown, then flip and cook for another 5-7 minutes. Remove from skillet and keep warm.
