    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and diced bell peppers. Sauté for about 5 minutes until the vegetables are tender.

    In a bowl, whisk together 6 large eggs, 0.5 tsp of salt, and 0.25 tsp of black pepper. Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are set but still fluffy, about 3-4 minutes. Remove from heat.

Avocado Cream

    Make the Avocado Cream

    In a small mixing bowl, mash 1 ripe avocado until smooth. Add in 0.5 cup of sour cream, 1 tablespoon of lime juice, and 0.25 tsp of salt. Mix until well combined and creamy.

Tacos Assembly

    Warm the Tortillas

    In a dry skillet over medium heat, warm the 6 corn tortillas for about 30 seconds on each side until pliable.

    On each tortilla, place a generous scoop of the egg filling, followed by a sprinkle of shredded sharp cheddar cheese. Drizzle with the avocado cream before folding the tortilla in half. Serve immediately.
