Egg & Filling

Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the ripe tomato, onion, and zesty peppers into small pieces. Set aside.

  2. 2

    Cook the Potatoes

If you are using raw potatoes, dice them into small cubes, then cook them in a skillet with a little olive oil over medium heat until golden and crispy, about 10-15 minutes.

  3. 3

    Prepare the Avocado

Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and set aside.

Cooking

  1. 4

    Cook the Eggs

In a skillet, heat the olive oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Cook, stirring gently, until scrambled and just set, about 3-4 minutes. Season with salt and black pepper.

  2. 5

    Combine the Filling

Once the eggs are cooked, add the diced tomato, onion, zesty peppers, black beans, and crispy potatoes. Stir to combine and cook for an additional 2-3 minutes until heated through.

Assembly

  1. 6

    Fill the Tortillas

Warm the flour tortillas in a dry skillet for about 30 seconds on each side. Place a generous amount of the egg filling in the center of each tortilla.

  2. 7

    Add Extras

Top each filling with a few spoonfuls of pork green chili and a dollop of mashed avocado.

  3. 8

    Wrap and Serve

Fold in the sides of the tortilla and roll it up tightly. Serve warm with additional pork green chili on the side if desired.
