Prepare the Shrimp
In a mixing bowl, combine flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, beat the eggs. Dip each shrimp first in the egg, then dredge in the flour mixture, ensuring they are fully coated.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated shrimp in batches, frying until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Bread
Slice the French bread loaves lengthwise. Spread a layer of mayonnaise on each side.

Assemble the Po'Boy
Layer shredded lettuce, fried shrimp, and tomato slices inside the bread. Drizzle with hot sauce to taste.

Cut the Po'Boy sandwiches in half and serve immediately with extra hot sauce on the side.
