1. Prepare the Shrimp

In a bowl, combine the buttermilk and shrimp. Let it marinate for at least 30 minutes.

2. Set Up Breading Station

In one shallow dish, place the flour; in another, beat the eggs; and in a third, mix cornstarch and panko breadcrumbs.

3. Bread the Shrimp

Remove shrimp from the buttermilk, letting excess drip off. Dredge each shrimp in flour, dip in beaten eggs, and coat with the panko mixture.

4. Fry the Shrimp

Heat vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches until they are golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

5. Prepare Boom Boom Sauce

In a separate bowl, mix together mayonnaise, sweet chili sauce, sriracha, and lime juice. Adjust seasoning to taste.

6. Toss Shrimp

In a large bowl, toss the fried shrimp with the boom boom sauce until well coated.
