Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Marinate
Pour buttermilk over the fillets and let them marinate for at least 30 minutes in the refrigerator.

Mix Dry Ingredients
In a shallow dish, combine cornmeal, flour, Cajun seasoning, salt, and black pepper.

Coat the Fish
Remove the fillets from the buttermilk, allowing excess to drip off, then dredge them in the cornmeal mixture until fully coated.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully add the coated catfish fillets to the hot oil, cooking for about 3-4 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve hot.
