    Prepare the Crawfish Mixture

    In a large mixing bowl, combine the crawfish tails, eggs, milk, Cajun seasoning, salt, and black pepper. Mix well until ingredients are fully combined.

    Dredge the Crawfish

    In a separate bowl, mix the cornmeal and flour. Take a spoonful of the crawfish mixture, dredge it in the cornmeal-flour mixture until coated, and place on a plate. Repeat until all mixture is used.

    Fry the Crawfish

    Heat vegetable oil in a deep skillet over medium heat. Once hot, carefully add the dredged crawfish cakes in batches, frying for about 3-4 minutes on each side or until golden brown. Remove and place on paper towels to drain excess oil.

    Assemble the Po'Boy

    Slice the French bread loaves in half lengthwise. Place a generous amount of fried crawfish on the bottom half, and top with lettuce, tomato slices, and any desired condiments (like remoulade or hot sauce). Close the sandwich and cut in half.
