Prepare the Sauce
In a saucepan, melt butter over medium heat. Add green peppercorns and sauté for 1 minute. Pour in the beef broth and simmer for 10 minutes until reduced by half. Stir in heavy cream, and season with salt and black pepper. Keep warm.

Cook the Steak
Season the tenderloin steak with salt and black pepper. Heat a skillet over high heat and add a bit of oil. Sear the steak for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness. Remove from heat and let rest for 5 minutes.

Serve
Slice the steak and drizzle with the green peppercorn demi-glace. Serve alongside freshly made French fries.
