Prepare the Ingredients

Slice the bell peppers into thin strips and set aside. If not already shaved, thinly slice the ribeye steak.

Cook the Peppers

In a large skillet over medium heat, add olive oil. Once hot, add the sliced bell peppers and sauté for about 5 minutes, or until softened. Season with salt and black pepper to taste. Remove from skillet and set aside.

Cook the Ribeye

In the same skillet, add the shaved ribeye and cook for about 3-4 minutes, stirring occasionally, until browned and cooked through. Season with salt and black pepper to taste.

Combine Ingredients

Return the sautéed bell peppers to the skillet with the ribeye. Mix well and cook for another minute to combine flavors.

Add Cheeses

Sprinkle the aerated cheddar and provolone over the ribeye and pepper mixture. Cover the skillet and allow the cheese to melt for about 2-3 minutes.

Assemble the Sandwich

Divide the cheesesteak mixture evenly between the two hoagie rolls. Serve immediately while hot.
