Marinate the Chicken
In a large bowl, combine buttermilk and hot sauce. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
Prepare the Breading
In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Carefully place the chicken in the hot oil and fry for about 6-8 minutes on each side or until golden brown and cooked through. Transfer to a wire rack to drain excess oil.
Assemble the Sandwich
Place a piece of fried chicken on the bottom half of each burger bun. Top with a slice of pepper jack cheese, followed by pickles and a generous drizzle of ranch dressing. Add the top half of the bun.
