Preparation

Cook the Noodles
Boil water in a large pot. Add lo mein noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together soy sauce, oyster sauce, sesame oil, garlic, ginger, cornstarch, and water. Set aside.

Stir-fry the Seafood
In a large wok or skillet, heat a tablespoon of oil over medium-high heat. Add shrimp, squid, and scallops, and stir-fry for about 3-4 minutes until cooked through. Remove from the wok and set aside.

Stir-fry the Vegetables
In the same wok, add a bit more oil if needed, and add bell pepper, carrot, snow peas, and green onions. Stir-fry for about 2-3 minutes until just tender.

Combine Everything
Add the cooked noodles and seafood back into the wok. Pour the sauce over everything, and toss to combine. Stir-fry for another 2-3 minutes until everything is heated through.
