Salmon Prep

Garlic Butter Finish

Method

Salmon Prep

  1. 1

Brush the salmon fillets with olive oil on both sides to help the seasonings adhere.

  2. 2

Drizzle fresh lemon juice over the fillets, coating both sides evenly.

  3. 3

Sprinkle fine sea salt evenly across the surface of each fillet.

  4. 4

Season with freshly ground black pepper over both sides.

  5. 5

Top each fillet with finely chopped fresh dill to perfume the fish.

  6. 6

Pan-sear the seasoned fillets in a hot skillet over medium-high heat until just opaque, about 3–4 minutes per side depending on thickness.

Garlic Butter Finish

  1. 7

In a skillet, melt the unsalted butter over medium heat until it foams.

  2. 8

Add minced garlic and sauté until fragrant, about 30–60 seconds; do not let it brown.

  3. 9

Pour in white wine to deglaze the pan, scraping up any browned bits.

  4. 10

Stir in the lemon zest and cook for another minute to release the oils.

  5. 11

Place the salmon fillets in the pan and baste with the butter-garlic-lemon glaze; finish cooking until the salmon is opaque and flakes easily.

  6. 12

Sprinkle chopped parsley over the glaze and serve with lemon wedges on the side.
