Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions and let it cool to room temperature.

Prepare the Sushi Rice

Dice the chutoro tuna, salmon, and avocado into small cubes. Shred the kanikama into bite-sized pieces.

Prepare the Fillings

On a bamboo sushi mat, spread a layer of sushi rice evenly. Lay down the chutoro tuna, salmon, kanikama, and avocado in a line across the center of the rice.

Assemble the Roll

Using the bamboo mat, carefully roll the sushi away from you while applying gentle pressure. Seal the edge with a little water.

Roll the Sushi

Using a sharp knife, slice the roll into 8 pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.

Slice the Roll

Drizzle unagi sauce and spicy sauce over the top of the sushi rolls. Garnish with shaved fresh truffle, a dollop of black caviar, and a side of tuna tartare.

Plate the Dish

Serve immediately, with soy sauce on the side for dipping.
