Instructions
- 1
Prepare the Flounder
Clean the whole flounder and pat it dry with paper towels. Make a few diagonal cuts on each side of the fish to help it cook evenly.
- 2
Marinate the Fish
In a small bowl, mix the olive oil, minced garlic, juice of half the lemon, salt, and black pepper. Rub this mixture all over the flounder, including inside the cuts. Let it marinate for at least 20 minutes.
- 3
Prepare the Asparagus
Trim the ends of the asparagus and toss them with olive oil, salt, and pepper. Set aside.

Make the Ancho-Persil Sauce
In a blender, combine the ancho chili powder, fresh parsley, lime juice, and a pinch of salt. Blend until smooth. If the sauce is too thick, add a bit of water to reach the desired consistency.
- 7
Serve
Place the grilled flounder on a serving platter alongside the grilled asparagus. Drizzle the ancho-persil sauce over the fish and serve immediately.
