Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice-cold water, whisking until just combined. The batter should be lumpy; do not overmix.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it—if it sizzles and rises to the surface, it's ready.

Fry the Shrimp
Dip each shrimp into the batter, allowing the excess to drip off, then carefully place them into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Cook for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the fried shrimp from the oil and place them on paper towels to drain excess oil. Serve immediately with sweet wasabi sauce for dipping.
