Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the crust
Press the crumb mixture firmly into the bottom of a 9-inch (23 cm) springform pan. Bake in the preheated oven for 8-10 minutes until set. Remove from oven and let cool slightly.

Make the filling
In a large mixing bowl, beat together 4 (8 oz) packages of cream cheese until smooth. Gradually add 1 cup granulated sugar and mix until fully incorporated. Add 1 teaspoon vanilla extract and 4 large eggs, one at a time, mixing on low speed until just combined.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and chill
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Remove from the oven, let cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Serve
Remove the cheesecake from the springform pan and slice into pieces. Serve plain or with your favorite toppings.
