Preparation and Cooking Instructions

  1. 1

    Prepare the Branzino

Preheat the grill to medium-high heat. Rub the branzino with olive oil, season with salt and pepper, and stuff the cavity with lemon slices and fresh herbs.

  2. 2

    Grill the Fish

Place the branzino on the grill and cook for 6-8 minutes on each side, or until the fish is opaque and flakes easily with a fork.

  3. 3

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat, add garlic, and sauté for 1 minute. Add zucchini, bell peppers, and asparagus; season with salt and pepper. Cook until tender, about 5-7 minutes.

  4. 4

    Make the Butter-Caper Drizzle

In a small saucepan, melt the butter over medium heat. Add the capers and lemon juice, and cook for 2-3 minutes until fragrant.

  5. 5

    Serve

Place the grilled branzino on a platter, top with the butter-caper drizzle, and serve with sautéed vegetables on the side.
