Directions

  1. 1

    Prepare the Beef

Wrap the prime beef filet in plastic wrap and freeze for about 1 hour or until firm. This will make it easier to slice thinly.

  2. 2

    Slice the Beef

Once firm, remove the beef from the freezer. Using a sharp knife, slice the beef as thinly as possible. Arrange the slices on a large plate or platter.

  3. 3

    Make the Kalamata Aioli

In a small bowl, mix the kalamata olives with the aioli and stir well to combine.

  4. 4

    Prepare the Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper to taste.

  5. 5

    Assemble the Carpaccio

Top the beef slices with the arugula, sprinkle with pine nuts, and add dollops of the kalamata aioli. Drizzle the dressing over the top.

  6. 6

    Add Parmesan

Finish by shaving the parmesan cheese over the carpaccio for added flavor.

  7. 7

    Serve

Serve immediately while the beef is cold and the flavors are fresh.
