Add Eggs
Beat in the eggs one at a time, mixing well after each addition. The dough should be smooth and glossy. Stir in the vanilla extract.

Bake the Profiteroles
Preheat your oven to 400°F (200°C). Using a pastry bag or spoon, pipe small mounds of dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and puffed. Leave the oven door slightly ajar to allow steam to escape and let them cool on a wire rack.

Make Vanilla and Chocolate Cream
In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form. Divide the whipped cream into two bowls. In one bowl, gently fold in the vanilla pudding mix. In the other, fold in the chocolate pudding mix.

Fill the Profiteroles
Once the profiteroles are cool, cut a small slit in the side of each puff. Fill one half with vanilla cream and the other half with chocolate cream.

Serve
Arrange the filled profiteroles in a glass dish and serve immediately or refrigerate until ready to serve.
