    Melt the Chocolate

    Chop the dark chocolate into small pieces and melt it in a heatproof bowl over simmering water (double boiler) or in the microwave. Stir until smooth and let it cool slightly.

    Prepare Egg Mixture

    In a separate bowl, separate the egg yolks and whites. Whisk the egg yolks with half of the granulated sugar until pale and creamy. Add the melted chocolate and vanilla extract to the yolk mixture, stirring until well combined.

    Whip Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.

    Fold in Egg Whites

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form.

    Combine Mixtures

    Fold the whipped cream into the chocolate mixture until fully combined and smooth.

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

    Serve chilled, optionally garnished with chocolate shavings or fresh berries.
