Custard Preparation

    Heat the Dairy

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it just begins to simmer. Remove from heat.

    Mix the Egg Yolks

    In a mixing bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.

    Combine and Cook

    Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring continuously until it thickens, about 5-7 minutes.

    Add Flavor

    Remove from heat and stir in the vanilla extract. Pour the custard into serving dishes and let it cool at room temperature.

    Chill

    Refrigerate the custards for at least 2 hours or until fully set.

    Caramelize Sugar

    Before serving, sprinkle a thin layer of sugar on top of each custard. Using a kitchen torch, carefully caramelize the sugar until golden brown and crispy.
