    Make the Filling

    In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat the blueberries. Set aside.

    In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 30 minutes.

    Preheat the oven to 375°F (190°C). Roll out one disk of dough to about 1/8 inch thick. Cut out circles to fit into a muffin tin. Press dough circles into the muffin tin, fill each with the blueberry mixture, and top with another rolled-out dough circle. Seal edges with a fork.
