Make the Biscuits
Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs.
Combine Wet Ingredients
Stir in the buttermilk until just combined. Do not overmix. Turn the dough out onto a floured surface and gently knead it a few times until it holds together.
Shape the Biscuits
Pat the dough into a 1-inch thick round. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.
Bake the Biscuits and Eggs
Make a small well in the center of each biscuit and pour in a bit of the egg mixture. Bake in the preheated oven for about 15-20 minutes, or until the biscuits are golden and the eggs are set.
Add Pimento Cheese
Once baked, remove from the oven and immediately top each biscuit with a dollop of pimento cheese. Serve warm.
