Preparation
Cook the Chicken
In a pot, boil the chicken breasts until fully cooked, approximately 15-20 minutes. Remove from water, let cool, then shred into bite-sized pieces.
Prepare the Veggies
In the same pot, add the diced carrots, potatoes, and onion to the remaining chicken broth. Simmer for about 10 minutes until the veggies are tender.
Make the Sauce
In a separate saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Stir in the flour, and cook for another minute. Gradually whisk in the chicken broth and milk, stirring continuously until the sauce thickens.
Combine Ingredients
Add the shredded chicken, peas, salt, pepper, and thyme into the thickened sauce. Mix well and allow it to simmer for a few more minutes.
Assemble the Pie
Preheat the oven to 425°F (220°C). Place one pie crust in a pie dish and pour the chicken mixture into it. Cover with the second crust, seal the edges, and cut slits in the top to allow steam to escape.
Bake
Bake in the preheated oven for 30-35 minutes or until the crust is golden brown. Let it cool for a few minutes before serving.
