Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.

Combine Wet Ingredients
In another bowl, beat the eggs and then whisk in the buttermilk and melted butter until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir until just combined; a few lumps are okay. Do not overmix.

Cook Pancakes
Preheat a griddle or non-stick skillet over medium heat. Grease lightly with butter. Pour 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.

Prepare Honey Butter
In a small bowl, mix together softened unsalted butter and honey until well combined.

In a small saucepan, melt unsalted butter over low heat. Add maple syrup and a scrape of vanilla bean. Stir until warm and combined.
