Preparation
Prepare the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, baking soda, salt, and garlic powder. Cut in the butter until the mixture resembles coarse crumbs. Gradually stir in the buttermilk until just combined.
Bake the Biscuits
Turn the dough onto a floured surface and knead gently for about 10 seconds. Pat into a 1-inch thick round and cut with a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes until golden.
Cook the Bacon
While the biscuits are baking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
Assemble the Biscuit
Once the biscuits are baked, split them in half. Spread pimento cheese on the bottom half, add the cooked bacon and the over-medium egg, then place the top half of the biscuit.
