Preparing the Lemon Aioli

Make the Aioli
In a small bowl, combine mayonnaise, lemon juice, minced garlic, salt, and black pepper. Mix well until smooth. Set aside to let the flavors meld.
Cooking the Salmon

Prepare the Salmon
Season the salmon filet with olive oil, salt, and black pepper on both sides.

Cook the Salmon
Heat a non-stick skillet over medium-high heat. Once hot, place the salmon filet skin-side down. Cook for about 5-6 minutes until the skin is crispy. Flip and cook for an additional 2-3 minutes until the salmon is cooked through and flakes easily.
Assembling the Salad

Prepare the Salad
In a large bowl, combine summer greens and sliced local cucumber. Toss gently to combine.

Divide the salad mixture onto plates. Crumble goat cheese on top of each salad.
