Preparing the Eggs

    In a non-stick skillet, heat 4 tablespoons of extra virgin olive oil over medium heat. Once the oil is hot, carefully crack each egg into the skillet, ensuring they don't overlap. Cook for about 2-3 minutes, or until the whites are set and the yolks are still runny.

    While the eggs are frying, use a microplane or grater to finely grate 30 grams of Pecorino Romano cheese. Set aside.
