Prepare the Wagyu Beef
In a large bowl, combine the ground Wagyu beef with salt and black pepper. Mix gently to incorporate the seasoning without overworking the meat.

Form the Patties
Divide the seasoned beef into two equal portions and form them into loosely packed balls. Do not press them too tightly to ensure a juicy burger.

Add Cheese
Flip the patties and immediately place a slice of American cheese on each patty. Cook for an additional 2 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

Prepare the Toppings
While the burgers are cooking, rinse the iceberg lettuce leaf and pat dry. Slice the heirloom tomato into thick slices and set aside.

Cook the Eggs
In a small non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes. Season with salt and pepper to taste.

Toast the burger buns on the griddle for 1-2 minutes until golden brown. On the bottom half of each bun, layer the smashed Wagyu burger patty with melted cheese, followed by shaved onions, the iceberg lettuce, and heirloom tomato slices. Top with the runny egg and place the top half of the bun on.
