Mushroom Preparation

Sauté the Mushrooms
In a skillet, heat olive oil over medium heat. Add the whole garlic cloves and sauté until fragrant. Add the wild mushrooms and cook until softened and browned, about 5-7 minutes.

Add Cognac and Demi-Glace
Deglaze the pan with cognac, scraping the bottom to incorporate any browned bits. Stir in the veal demi-glace and thyme. Cook for an additional 3-4 minutes, allowing the mixture to thicken slightly. Season with salt and black pepper to taste.
Pizza Assembly and Baking

Prepare the Pizza
Preheat your oven to 220°C (425°F). Roll out the pizza crust on a floured surface to your desired thickness. Transfer to a baking sheet or pizza stone.

Add Toppings
Spread the sautéed mushroom mixture evenly over the pizza crust. Dollop ricotta cheese on top of the mushrooms.

Bake the Pizza
Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is slightly melted.

Remove from the oven, let cool for a few minutes, slice, and serve hot.
