    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the carrots, celery, and onion. Sauté until softened, about 5-7 minutes.

    Brown the Meat

    Add the ground veal, ground beef, and ground pork to the pot. Cook until browned, breaking up the meat with a spoon, about 10 minutes.

    Deglaze with Cognac

    Pour in the cognac and cook for 2-3 minutes, scraping any browned bits off the bottom of the pot.

Cooking

    Add Tomatoes and Simmer

    Stir in the San Marzano tomatoes, salt, and pepper. Bring the mixture to a gentle simmer, cover, and let cook on low heat for 5 hours, stirring occasionally.

    Finish with Cream and Herbs

    After 5 hours, stir in the heavy cream, fresh basil, and fresh oregano. Cook for an additional 10 minutes.

    Cook Rigatoni

    In a separate pot, cook the rigatoni according to package instructions. Drain and set aside.

    Combine and Serve

    Toss the cooked rigatoni with the Bolognese sauce. Serve hot with additional herbs or grated cheese if desired.
