Prepare the Cannoli Shells

Make the Dough
In a large bowl, mix together flour, sugar, salt, and melted butter. Add the egg and white wine or vinegar, and knead until the dough is smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll Out the Dough
After chilling, roll out the dough on a floured surface to about 1/8 inch thick. Cut into 4-inch circles.

Form the Shells
Wrap each circle around a metal cannoli tube and seal the edges with a bit of water.

Fry the Shells
Heat oil in a deep pan to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Allow to cool before removing the tubes.

Mix the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and then fold in mini chocolate chips.
Assemble the Cannoli

Fill the Shells
Using a piping bag, fill each cooled cannoli shell with the ricotta filling.

Garnish
Dust the filled cannoli with powdered sugar and cocoa powder if desired. Sprinkle with chopped pistachios.
