Frying Catfish

Prepare the Fish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Mix Dry Ingredients
In a large bowl, combine cornmeal, flour, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well.

Coat the Fish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the oil and drain on paper towels. Serve hot with homemade tartar sauce and lemon wedges.
